The slow cure

The slow cure

Cure is where flower becomes itself. The plant comes down vivid and green, but it isn't finished — not by a long way. The weeks that follow, slow and unglamorous, are where the harshness leaves and the character arrives.

We cure cold and slow, in small batches, opening the jars by hand and reading them by nose. There's no shortcut that doesn't cost you something in the glass.

When a batch is ready, it tells you. The smell rounds out, the smoke softens, and the terpenes that were sharp become layered. Only then does it earn the Zephyr name.
